- 1cupPecorino Romano cheese, grated

Bring a large pot of salted water to boil

Cook spaghetti according to package directions; drain, reserving 1 cup pasta water

While pasta cooks, fry pancetta in a large skillet until crispy

In a bowl, whisk together eggs, cheese, and black pepper

Add hot pasta to pancetta skillet off heat

Add egg mixture and toss quickly, adding pasta water as needed for sauce
