Pasta Carbonara

Ingredients

  • 1lbSpaghetti
  • 6ozPancetta or bacon, diced
  • 4wholeEggs
  • 1cupPecorino Romano cheese, grated
  • 1tspBlack pepper
  • 1tspSalt

Instructions

    Bring a large pot of salted water to boil

    Cook spaghetti according to package directions; drain, reserving 1 cup pasta water

    While pasta cooks, fry pancetta in a large skillet until crispy

  4. 4

    In a bowl, whisk together eggs, cheese, and black pepper

  5. 5

    Add hot pasta to pancetta skillet off heat

  6. 6

    Add egg mixture and toss quickly, adding pasta water as needed for sauce

  7. 7

    Serve immediately with extra cheese and pepper
