Tomato Soup

Ingredients

  • 28ozCanned tomatoes
  • 1mediumOnion, chopped
  • 3clovesGarlic, minced
  • 4cupsVegetable broth
  • 0.5cupHeavy cream
  • 2tbspOlive oil
  • 1tspSalt and pepper

Instructions

    Heat olive oil in a large pot over medium heat

    Sauté onion until softened, about 5 minutes

    Add garlic and cook for 1 minute more

    Add tomatoes and broth; bring to simmer

    Simmer for 20 minutes

    Blend soup until smooth using an immersion blender

    Stir in cream and season with salt and pepper

    Serve hot with crusty bread
